Can anyone tell me what the procedure is when you are travelling
through the tunnel by Eurostar on a coach. Can you get off the coach
or do you sit in the coach for the duration of the trip. Also how
long does it take?

I presume you mean Eurotunnel?

Yes, but there isn't much for you to do except go to the toilet.

35 minutes travel time, about 50 minutes between loading
and unloading, and depending upon the ticket type that the
coach operator has bought, 30-120 minutes 'waiting' in the
lounge

Yes, you can get out of the coach and walk around the carriageif you want
to. There is a drinks machine available. Most people usually don't bother as
the trip only takes about 30 minutes.

If you want scenery and have an hour more to spend, ferry crossings are
still an option.

IIRC, the underground part of the crossing is only about 17
minutes...the rest is all surface travel, and people moved to the WCs,
the snack car, etc.
