Ontario-Quebec .. english and weather

Hi guys!

I'm writing from Italy, I would like to visit Canada next year and I have
some questions to do.. Do you want to help me, please?

The official language in Ontario and Quebec is french. Does someone speak
english? I don't know french.. Can I visit them anyway?

Sencond question is: what's the weather like? (26 august - 11 september)

I like parks and nature. What are the most beautiful parks on the East
Coast?
