In 2008, I wanna do a safari for me and the mrs. We currently live in
Sydney. We would prefer to do it in December or January, although July
and August is a remote possibility as well. We'd like to spend 5-7
days in the bush, looking at animals and staying in a top-end resort,
maybe something akin to the Voyages resorts we have stayed at in
Australia. Suggestions? Thoughts? Caveats? S.A. or Kenya? Winter or
summer?

Too short.

But if you still want to do it, look at one of the upper class
lodges in Masai Mara, Kenya. Mara Intrepids or their upper-class
Explorers (?) comes to mind.

Note that top-end resorts charge something around $800 for a
double per night. I don't know the one you mentioned.

And all in six days.

Reminds me of the tourist, saying, "Yesterday we did Spain."

Kenya i bet will be the most preferably, that is between july and
towards the end of october, you will spend your best time in the
bush, there are plenty of animal during this period especially maasai
mara due to the spectacular migration of thousands of wildebeest to
the park.Amboseli and samburu will also do.

The accommodation is superb ranging from luxurious lodges to beautiful
permanent camps.

7 days or more will do.

We were in the Serengeti-Tanzania in June. The migration had been
stalled. Plenty of rain earlier had kept the grass growing. So most of
the animals were still there. We visited the crater and enjoyed every
minute. The question then arises; when is the best time to safari?
Much of it depends on the weather. Whatever you do avoid the rainy
season. Good luck and enjoy.
