It's really a gamble. Generally ticket prices go up the closer you get to the
departure date simply because the supply of tickets decreases and the cheaper
ones sell first. However, there are sometimes exceptions. Last year I booked my
flight to Greece several months in advance, only to find that tickets for the
same flight were actually cheaper as the departure date neared. However, in
that case it was almost certainly due to the fact that there was a war going
on, which caused a dramatic decrease in international travel, especially to the
places I visited.
It may also depend on the particular airline. Which carrier are you taking to
Istanbul? Turkish Airways tends to be fairly expensive. I paid an arm and a leg
for my short flight from Athens to Istanbul despite the fact that the flight
wasn't even half full. They were the only game in town though.
I know that's probably not the definitive answer you were hoping for, but
unfortunately airfares (especially international airfares) can be very strange
and it's a difficult game to predict. If it were me I'd rather know that I got
the flight I wanted rather than taking the chance by waiting and risking having
to pay more or not being able to get there at all. That's just a personal
preference though.
Whatever you end up doing, enjoy your stay in Istanbul. I'm getting jealous
just thinking about all the Turkish Delights you'll be able to eat
