In my travels in Europe over the past 5 years (Austria, Germany,
Norway, the Netherlands), I don't think that I was ever presented with
an opportunity to use US dollars. In places in Mexico that do take
US$, the over-the-counter exchange rate was always terrible.
The Swiss use the Swiss Franc, not the Euro. Not having traveled in
Switzerland, I don't know how Euros are handled there.
When I was in Norway, I conducted all transactions in Norwegian Krone
(NOK).

Unless buying foreign currency in Australia is done differently from
here in the US, that's not really a very good idea, since you'll pay a
significant premium for the exchange.
Far better is to use your bank ATM card to get walking-around cash and
to use major credit cards for everything else.
