They (and you) don't. But it doesn't matter, if you can't prove to the
company that they have signed for delivery they might deny having received
it, even if the have, so you have to send it again. It's only a letter, how
hard is this?

Because the returned letter is of no value to you. It's the proof of
acceptance that has the value.
