One week in Australia--where to go?

Hello. I have a business trip that just came up in about a month to
Canberra. I'd like to take the following week (probably Sunday-
Friday) as vacation (hey, work pays for a trip to Australia, I'm going
to explore!), and I'm trying to figure out where to go.

I have been to Australia twice before, and I've already covered the
areas in and around Sydney, Melbourne, Adelaide, and Canberra. I also
went to the South Island of New Zealand. So I'm looking for somewhere
new this time.

I'll probably be traveling alone. I love scenery, small towns (not
such a city person; I can spend a day in one exploring, but that's
enough), shopping (but for local things, not clothes shopping), short
hikes (since I'm traveling alone), etc. To give you an idea, my most
memorable times in Australia/New Zealand were Te Anau/Milford Sound,
Great Ocean Road, Mount Ainslie (with the kangaroos), Cleland near
Adelaide, the Dandenongs, etc.

I'm okay with staying in a new place every night or having a base or
two. But to keep costs down, I just want to get a roundtrip ticket to/
from Canberra and don't want to take too many plane rides. I don't
need the Ritz but I don't want to stay in hostels (B&Bs with ensuite
are fine). I can take or leave fine dining; I'm actually just as
happy with a sandwich that I pack in the morning than with gourmet
cooking.

I'm also okay with driving on the left (although I've not yet been
brave to drive a manual). Speaking of which, would the clutch be to
the left or right of the accelerator/brake? And on the gearshift,
would first gear be to the top left or top right?

Any suggestions? Thanks in advance for all your help!
